In 2002, Chef Melissa Fox launched A Casa, her first catering company. The empanadas and sauces that would define Fox Gourmet were developed here — recipes guests kept asking to take home. In 2008, those recipes moved into a restaurant: Casa Fox on the Lower East Side — for years, one of the only Nicaraguan restaurants in the city. Zagat-listed and Michelin Guide–featured, it ran for a decade. The food that started in a catering kitchen was proven at scale on real tables.

Fox Gourmet is the take-home version of a restaurant people loved. Every recipe was a menu item before it was a jar. Developed in a working kitchen. Asked for by name.
